Our executive performance chef Will Carvalho is the latest guest on the Official Brighton & Hove Albion Podcast.
Will is a vastly experienced chef, who is responsible for creating tailored meal plans that fuel the team through training, recovery, and match days.
“We always have a few requests,” Will said. “There's always a bit of a battle between the Argentinians and Brazilians about who has the best meat.
“We change the dishes a lot as well. I tried to make sushi for Kaoru – I think he enjoys it! But we’re always trying to mix it up.
“We're always trying to have a menu that is more complicated in a way, so there's more elements to a dish.”
Carvalho also discussed in depth how he has to ensure that the players are always eating the right things to ensure top performances on the pitch.
“You can look at a chocolate bar and compare it to an avocado and say there's similar calories here, but what it does to your body is totally different. It’s like different types of oils for a car. If you want to be a Formula One car, you've got to have very different oil.
“The performance side of it is that players are like Formula One cars. They need to have the best tyres, the best engines, the best fuel, the best oil. But then for ordinary people, it's very different.”
